Cleaning out the grease trap and cleaning out the lines are both important and should be done regularly. They are also very different procedures. The grease trap filters and collects the grease to keep it from entering the city sewer system. It should be cleaned out at least one per quarter but in a busy restaurant, it may need to be cleaned out more frequently. The line continues from the grease trap but should probably still be jetted annually.
